Lamb Chops with Dried Cherries and Apricots
serves 4

Ingredients

Instructions

  1. Season the chops with salt, pepper, and coriander, then brown in olive oil with the garlic and thyme.
  2. Add the wine, cherries and apricots and bring to a boil until the wine is reduced by half. Add the broth, bring to a boil, then simmer until the sauce is thick and glossy, turning the chops as needed.
  3. Discard the thyme, plate the chops, garnish with fresh thyme, and serve.
