Lamb Chops with Dried Cherries and Apricots
serves 4
Ingredients
- 8 ea lamb chops
- 1 T ground coriander
- 8 cl garlic, halved
- 10 ea thyme sprigs
- 1 C red wine
- 1/2 C dried cherries
- 1/2 C dried apricots, quartered
- 2 C beef broth
Instructions
- Season the chops with salt, pepper, and coriander, then brown in olive oil with the garlic and thyme.
- Add the wine, cherries and apricots and bring to a boil until the wine is reduced by half. Add the broth, bring to a boil, then simmer until the sauce is thick and glossy, turning the chops as needed.
- Discard the thyme, plate the chops, garnish with fresh thyme, and serve.
